Acetums and Oxymels
For centuries, herbalists preserved plants in vinegar to capture their aroma and character long after the harvest. These preparations, known in classical herbal medicine as acetums, appear throughout Greek, Roman, and medieval traditions, where physicians and apothecaries used vinegar to draw out the virtues of leaves, flowers, berries, and roots.
Vinegar is a remarkable botanical solvent. Its natural acidity extracts aromatic compounds and plant acids, creating infusions that are both stable and deeply flavorful. A closely related preparation is the oxymel, from the Greek oxymeli “acid and honey” in which herbal vinegars are blended with honey to create rich, syrup-like preparations.
