Umbra Fructuum

 A dark and complex fruit acetum combining blueberry, chokeberry, goldenberry, and fig. The infusion produces a deep garnet vinegar with layered sweetness and tannin, reminiscent of young wine. In traditional herbal understanding, dark berries were valued for their richness in plant pigments and their association with vitality and resilience.

Historical note
Berry vinegars and syrups became particularly common in medieval Europe. Herbal manuscripts such as the Tacuinum Sanitatis (14th century) describe fruits preserved in acidic preparations for both culinary enjoyment and healthful balance.
